Chef Rick (alias Rich McDaniel) serves up a delicious blend of all these styles of cuisine, as well as cooking tips, food trivia, advice on choosing and using cookware and much more.

Rick is a native North Carolinian but has always had a love in his heart for the people and food of Louisiana. Cajun and Creole cooking is one of his specialities and there are a lot of good recipes in the recipe section.

Rick is a food writer who learned his Southern cookery from his grandmother and a friend from Charleston.

He launched his weekly cooking column "What's Cooking" in 1990 as a way to spread his love of Southern regional cuisine and to make huge amounts of friends and money.

He says that his love of cooking is doing quite well, he has made lots of friends and just enough cash to afford those Gin Su knives he has always wanted.

Rick has very kindly allowed us to reproduce some of the items from his site and as the subjects range from food safety, kitchen equipment, cake baking, food first aid, cooking tips etc., these can be found scattered around the "kitchen" area.
