Making ice cream
without an ice cream maker

Step 1

Decide on the flavor of ice cream you want to make

Step 2

Find a suitable recipe, get the ingredients, make up the mixture

Step 3

Pour your freshly prepared mixture into a fairly wide bowl and put in your refrigerator to chill for between 1 and 2 hours. How long will depend upon whether you've actually heated up or cooked any of the ingredients when making the mixture.

Step 4

Remove from the refrigerator and put into your freezer for 30-40 minutes.

Step 5

Take the bowl out and check the state of the mixture - it should have started freezing from the outside edges in but not be fully frozen in the centre of the bowl.

Step 6

Place the bowl onto a work surface and beat the mixture well, breaking up any ice crystals and making it smooth again.

Step 7

Put the bowl back into your freezer and wait another 30-40 minutes.

Step 8

Repeat steps 5 through to 7

messy chef

Step 9

Repeat steps 5 and 6

Step 10

Put the bowl back into the freezer for the final time and check every 30 minutes or so until your ice cream is frozen and ready to eat.

Once your mixture is prepared you can blend/freeze as you prefer.

I expect you are now "itching" to have a go, so here are some recipes to get you started. Two easy but popular varieties followed by a couple of more unusual ones using ingredients which are normally readily to hand.

Easy ice cream recipes

Banana Ice Cream - Easy Recipe

a banana

The ingredients:

3/4 pint (375ml) cream or milk

4oz (100g) sugar

3 bananas – nicely ripe (to mash up)

To prepare the mixture:

Mash the bananas well and put into a mixing bowl. Take the cream or milk and pour  into the bowl. Mix in well with the bananas.

a) use an electric ice cream maker to blend/freeze your ice cream which usually takes 20 to 40 minutes.  Always follow the manufacturer's guidelines.

or

b) blend/freeze by hand without an ice cream maker See the guidelines set out above for ice cream making without a machine

TIP - an even easier recipe is to cut up bananas into fairly small pieces (ripe ones work well) and then freeze.  Once frozen, place some banana pieces into a food processor until mashed up and then eat.

Vanilla Ice Cream - Easy Recipe

The ingredients:

1/2 pint (250ml) light cream

1-2 teaspoons vanilla extract

condensed milk (small can)

To prepare the mixture:

Take the cream, condensed milk and vanilla extract and pour them all slowly into a mixing bowl. Mix gently together until your mixture is nice and smooth.

a) use an electric ice cream maker to blend/freeze your ice cream which usually takes 20 to 40 minutes.  Always follow the manufacturer's guidelines.

or

Unusual ice cream recipes made from easily accessible ingredients

Fresh Coffee Ice Cream Recipe

Ingredients:

4 tablespoons fresh coffee (finely ground)

8 oz (200g) soft brown sugar

1 pint (500ml) milk

5 egg yolks

6 fl.oz (approx 185ml) very hot water

bag of coffee beans and a mug of hot coffee

Pour the very hot water onto the fresh ground coffee and leave to stand for up to 10 minutes. Important next step is to strain the mixture to get rid of the grounds.  Use a bowl that's heatproof and put into it the egg yolks and soft brown sugar. Mix them together until nice and thick.  Take the coffee mixture and milk and whisk these in next. Then place the bowl over a saucepan of simmering water to gently heat the mixture. Allow to cook and stir occasionally. When the mixture is thick it's ready to be taken off the heat. Leave the bowl to cool.

a) use an electric ice cream maker to blend/freeze your ice cream which usually takes 20 to 40 minutes.  Always follow the manufacturer's guidelines.

or

b) blend/freeze by hand without an ice cream maker; see the guidelines set out above for ice cream making without a machine.

Fresh Mint Ice Cream Recipe

Ingredients:

3/4 pint (375 ml) crème fraîche

fresh mint (6-8 sprigs depending upon taste)

3 egg whites

5 tablespoons of caster sugar

Chop the sprigs of fresh mint, blend together with the sugar and then stir in the crème fraîche. Make sure all ingredients are mixed together well. Take the egg whites and whisk until nice and stiff, then gently fold into the mint/sugar/crème fraîche mixture. Your ice cream mixture is then ready.

a) use an electric ice cream maker to blend/freeze your ice cream which usually takes 20 to 40 minutes.  Always follow the manufacturer's guidelines.

or

b) blend/freeze by hand without an ice cream maker; see the guidelines set out above for ice cream making without a machine.
